Vizcaya Cask 12 is a Dominican Republic rum produced by Oliver & Oliver, the independent Dominican house that sources distillate from Caribbean producers and ages and blends it in its own warehouses, and brought into the US market in 2014 by A. Hardy USA. Vizcaya's own account is that ripe sugarcane is pressed for its juice, which is filtered, fermented and distilled in small batches on a continuous column still before going into oak; the Ministry of Rum and reviewers have noted the base is more likely molasses, as is typical for Oliver & Oliver, so treat the cane-juice claim as the brand's. Difford's Guide lists the Cask 12 as aged six years in ex-bourbon casks and bottled at 40% ABV, with the 12 being a cask designation rather than an age statement. Difford's tasting found a mid golden amber color, a subdued nose of dried fruit and fruitcake, a slightly sweet, mellow palate of vanilla, dark chocolate and maple, and a long finish with delicate spice; the brand itself calls it a light-bodied dark rum with a buttery finish.
